Vegetarian Ceviche

Hello Everyone, I am back. It has been a hot minute since I last posted here.

To celebrate my first post for a while and for the summer, I am going to share with you, my Vegetarian Ceviche to help you cool down for the summer.  Hope You enjoy it recipe and the video. Check out my previous post for another vegetarian ceviche recipe.

Ingredients:

  • Cauliflower
  • Roman Tomato
  • Purple Onions
  • Jalapeño
  • Fresh Cilantro
  • Lime
  • Salt
  • Tostadas
  • Avocado (optional)
  • Tapatio (Optional)

 

Directions:

1) Boil water with salt

2) Peel the leaves from the cauliflower and chopped it into fourths

2) Drop the Cauliflower into the boiling water and cover for 5 minutes

3) Take Cauliflower and set it aside to cool down

4) Chopped the tomato, jalapeño, and onions into small chunks

5) Chopped the fresh cilantro between medium and fine

6) I combine the tomato, jalapeño, onions into the bowl, and mix

7) Set it aside

8) Chopped the Cauliflower into small bite size chunks, squeeze lime juice between the chopping into the bowl of Cauliflower

9) Let it chill in the fridge for 30 minutes

10) Mix the Cauliflower with the mixture of tomatoes, jalapeños, onions, and cilantro

11) Add salt if desired

12) Your dish is ready to serve on top of a crunchy tostada.  Add Tapatio, Herdez Guacamole Salsa, and Avocado for flavor
